Market dictates needs right? That’s what drives a lot of economic theory and probably is one of the forces behind recent efforts to develop a lexicon for cider in the U.S. Market needs – and in my mind, it is a need to diversify, classify, and mature the cider drinker – seem to be pushing for classifications and universal ideas in cider.
