Cider Needs a Lexicon

Market dictates needs right? That’s what drives a lot of economic theory and probably is one of the forces behind recent efforts to develop a lexicon for cider in the U.S. Market needs – and in my mind, it is a need to diversify, classify, and mature the cider drinker – seem to be pushing for classifications and universal ideas in cider. But, cider is just a specific kind of fruit wine isn’t it? Why can’t we use some of the tools of the wine world? Curious to hear your thoughts on this piece.
