The Bee's Knees

While I can neither confirm or deny the existence of knees on any honey-producing bee species, I can confirm this classic is delicious, simple, and shows off the diversity of gin and honey combinations possible. It's also fun to play with the aromatics on this cocktail, letting different citrus and herbs/spices bring out particular flavors in the ingredients.

I take no credit here for the cute lavender leaves and lemon tie, all credit to my partner Pamela at @Altruistic Esthetics for coming up with the garnish today.


This version was made with a honey syrup that is equal parts honey and water. Stir together over heat until the honey dissolves, and don't let it boil.


2 oz gin

0.75 oz honey syrup

0.75 oz fresh lemon juice


Shake hard for 15 seconds and then strain into a chilled cocktail glass.


Garnish not necessary but a lot of fun!
